Post Which animal did Noah extinct?

Just a random thought while skimming the babble this weekend:

Upon landing the Ark, noah and family made a sacrafice to god in thanksgiving. Supposing that sacrafices at the time were animal offerings, and that the only animals left on earth were the ones they loaded on the ark, which species do you suppose Noah doomed to extinction by sacraficing one of the only remaining breeding pair?

If you read the passage, I believe the ark contained 7 pairs of each "clean" animal. The "clean" animals would be the ones sacrificed. Therefore, no species would have been eliminated.

The next two questions to ask are:

How did Noah know which animals were clean vs unclean if it hadn't been spelled out by Moses yet?

What did those carnivores eat given that there were only two (or 14) of each prey animal to snack on for a considerable time afterward? And how did those prey animals survive this onslaught?
