Post Canon and Councils?

Are there any books or resources that detail: what was said at the councils when the Canon was voted on and the Trinity formulated, which churches or groups held to which books, or the minutes of the meetings?

Yes and know. There is no verbatim record of what went on at the ecumenical councils. The trinity was established as orthodox doctine in 325 C.E. at the Council of Nicaea under the authority of Emperor Constantine (whence the Nicene Creed). The canon was not formally established in the Western Branch of the church until the Council of Trent in the 16th century. The best book I’ve ever read on the issue of how the canon was formed is very cleverly entitled, “The Canon of the New Testament” by Bruce Metzger. He discusses how certain books were accepted in some areas more readily than other areas. Heretics are covered in terms of the influence they may (or may not) have had on canonicity. You won’t find a more detailed discussion of the issue anywhere else.
