Default New Testament stories made from Old Testament stories

Hi,

What evidence is there that the authors of the Gospels made up stories based on Old Testament ones?

How do you interpret this? Luke 24:13-35

In particular:

Jesus Appears to the Disciples

44 He said to them, "This is what I told you while I was still with you: Everything must be fulfilled that is written about me in the Law of Moses, the Prophets and the Psalms."

45 Then he opened their minds so they could understand the Scriptures.

I don't know. The only thing that I don't understand is where Moses ever talked about Jesus?
