Now, how could Noah know what Clean and Unclean beasts were, if God had never told him prior to the building of the Ark? Does this mean that the story of Noah was written after the Leviticus laws of animal sacrifice were written? This is a question I can never seem to find an answer to. I'd really like to have a discussion on this.
Perhaps Noah used his own judgment?

It is quite possible that the flood allegory was written post Sinai, and the first creation allegory, making use of a Mesopotamian seven day week, likewise. It is quite hard to imagine who would have written Genesis 1-11 before Sinai.

However, the concept of clean and unclean animals was already common in the region, so the flood story would have made sense much earlier than the Levitical laws. In fact, there are instructions regarding uncleanness in Lev. 5, before the 'official list' of Lev. 11.
