Because pride is the opposite of humility and these are attributes of the ego. Without pride there can be no humility to say that their eyes were opened before they could see their own humility. More to the point is that Adam was the pride of his ego identity who took Eve to be his wife in humility and promised to decorate her with the richess he found outside of Eden. In other words, she was his Titanic and it was the pride of his life that fashioned her in the image of the living.

i dont really understand what youre saying....pride is the opposite of humility yet wihtout pride there can be no humility?

Yes, a pair of opposites cannot be conceived to exist without the other. Without an ego there can be no pride and without pride there can be no humility.

In Gen.2:25 they were naked to wit and felt no shame because they were naked to wit. In Gen.3 they ate from the TOK and that is when their eyes were opened to wit. Note that with their eyes still closed they were man and woman instead of Adam and Eve. After their eyes were opened the ego was formed upon the TOK behind which they hid themselves. This second identity was called Adam by the Lord, and Adam took the serpent to be his wife, and 'he' called her Eve (that is the proper declension).

We now have two females, the woman of the TOL and the serpent of the TOK which Adam called Eve (hence the curse on the serpent and the woman with enmity between their offspring). Eve provided the woman with data to be converted into beauty and wisdom by the woman (notice that to woman was in charge for she saw that the TOK was good for 'gaining' wisdom).

The pride of the ego is to be juxtaposed with the lowness of the serpent who is banned to show that she is not really an animal but a figment of our imagination (she becomes Magdalene in the Gospels long after she has gained status and respect through her offspring as gatherer).
