Because it was created by men in a male-dominated society of course, a single god would have no need for sex organs, for there are no other gods to reproduce with

Yes indeed. But the deeper issue here is why a god needs to have gender at all. Unless you are like Ojuice there, god doesn't really need the equipment, if you get my meaning, unless there is some sort of mating system between gods.

This seems indicative of god being just a construct of the human mind.

Well God the Father has no organs, He is spiritual. Jesus has organs because He is a man and God.

Then you're arguing that this hypothetical diety is neither a he nor a she, since certain organs do tend to define whether an entity is a male or female.

What about Exodus 24:10 and 31:18 or Isaiah 30:27-28 and 30:33? Or is this just allegory? And if it is allegory, how do you know it is allegory?

It probably has something to do with the fact that nouns and verbs in hebrew all have genders. This leads to funny things like pencils and apples being male and words being female. Therefore god had to be one or the other, and guess who the authors were?

Jesus has organs? Why does he need them in heaven? Do they function at all, eg. testes produce semen, or are they in a permanent stasis?

That's biologically implausible, since the sex really necessary for reproduction is the female one. This is evident by considering those species that are descended from sexually-reproducing species, yet that reproduce by parthenogenesis (virgin birth). It's always the female that does that, and never the male.

Also odd is creation story #2 in the Bible, where the first male of our species is created first, and then the first female, after god figures out that his creation is lacking something. How would Adam have reproduced if there was no Eve?

There's supposedly some rabbinical legend that states that Adam had been hermaphroditic; god would simply put Adam's female parts into Eve, letting Adam have the male parts. That has the difficulty that both sexes' parts are essentially the same organs -- organs that can grow much bigger in one sex than the other.
