"Ironically, pyramids are never even mentioned in the Old Testament! You'd think this would be significant"

This doesn't really surprise me for two reasons:

If there ever were Hebrew slaves in Egypt and the location of their slavery was as it says in the Bible, this would have been several hundred miles north of Giza. They would have had no reason to visit the Pyramids, even the Egyptians themselves no longer bothered with them circa 1500 BCE, the Sphynx was covered up to it's neck in sand and Pharoahs were no longer being entombed in pyramids, they were taken to "The Valley of the Kings" for burial at this point in time.

They only mention the Tower of Babel because it was part of mesopotamian mythology for ages, much like the way the flood story from The Gilgamesh Epic ended up in the Bible.

Well actually there are two stories there. One of the City of Babel and one about a Tower of Babel. The story is kinda true in the sense that it was written in marvel of how the Babylonians built stuff. In Canaan, important buildings were made out of large rocks, while their less important were made of bitumen and brick. This didn't exist in Babylon. They only had bitumen and brick. Their large towers amazed the Israelites because they were built of the most incredibly "cheap" materials. Of course, the plotline is of ancient origins, as you say.
