Nonbiologists accept evolution for the same reason non-chemisists accept PV=NRT. The scientific method works.

True, to a certain degree one has to occationally defer to relevant experts. But the reasons why one should accept evolution are accessiable to non-biologists willing put in the time and effort to look at the issue. In the end, we don't have to rely soley on authority.
