Kosher salt is used to salt the meat well, let it sit for an hour so the salt will draw out the blood, then rinse and cook.

If you can't afford to have a $1500 suit cut off you in an emergency, then you shouldn't be wearing one. Geesh, it's just a suit.

"Boy, that car accident victim sure is wearing a nice suit. Here, help me sit him so I can take his jacket off. That's good...Twist his neck around a little so we can get that tie removed. That's some damn fine silk we're dealing with here, people! Careful!"

Actually, the process of darining out the blood makes for better meat. I am an atheist, and I kill all my chickens by hanging them upside down and slitting their throat. The blood drains out ( I collect the blood for a great gravy, btw) and makes for a better tasting and more uniform meat. No religious reasons whatsoever, merely practical.

I don't do this very often, 4 times last year on excess and defective roosters. They were quite yummy.

What on earth is a 'defective rooster?' Did it crow at dusk or something?

Genetic defects, my unscientific friend, like toes that point the wrong way etc. Not genes one wants in the gene pool, but good eating. Hey, If I don't eat it, the coyotes, hawks etc will, or it will die of old age or disease.
