Chitlins/Chitterlings are pigs' intestines. I never knew there was a proper term for them, cos it happens to be one of my all-time favourites - cooked either in soy sauce or fried in oil...

Fried scrapple is fantastic. Might lead to an early death due to saturated fat and cholesterol content but it tastes mighty good.

But then I used to like potted meat and mayonaise sandwiches.

Of course not you moron! It's cheeseburgers three meals a day, and pizza on sunday! ('course, some of us have pizza 3X a day and cheeseburgers on sunday...)

Offal is essentially organs of animals. I have no idea what scrapple is, but I imagine it's along the same road.

Yep! Scrapple - that mid-east delicacy - is like all of the parts that would usually get fed to the dogs or trashed (kindeys, lungs, rectums, hooves, etc...) ground up into something like course Spam, then usually fried in *lard*...
