Actually, I get decent mileage out of the following:

"Well, it doesn't take a rocket scientist....well, I guess it does."

And variations on it.

Physics; currently a graduate student. I've tried the usual corny jokes "But I'm no Einstein," etc. It just seems to put people ill at ease no matter what. Not necessarily "jealous" ill at ease, but more often simply "intimidated" ill at ease. I don't understand why. It's not like I tell people whilst looking down my nose at them and implying that because they aren't that somehow I'm better. I never went out of my way to mention it, but eventually just started hoping the "what do you do" thing never came up. It's been very frustrating.
