Your barbecue, that is.
This evening, I got to go to the "Q Shack" in the middle of Durham, which serves very North Carolina-style barbecue. For those not in the know, NC barbecue is vinegar-based rather than tomato-based... it's quite a sharp little kick in the mouth, and pretty delicious. Especially with a side of cool potato salad to balance out the sourness. As good as the Q Shack's offerings were, however, I must say I prefer tomato-based barbecue. IMO, vinegar-based, while it has its virtues, just doesn't have that same sweet tangyness I've come to know and like. And lest I be labeled jingoistic, let me also say I've never met a Korean barbecue I didn't like (although sad to say, I haven't met many). So how do you like your barbecue? |

snags over open coal, on a slice of bread with tomato or barbecue sauce. and fried onion, although that's real hard to cook on a grill

Mustard-based. There's a greaaat place in Charleston.. if I only remembered the name....
And now I'm hungry with nothing but olives and wilted salad in the fridge.... <sigh> |

I was thinking there were two kinds of NC style barbecue. I know all the places around here have the vinegar-based kind, I rather like it. But I'm not picky, I'll eat any kind. Except with onions....I hate onions....
