As for the last question, I know the sites could perhaps be broken up into their own 'Nutwatch' editions if you so chose. I take it you largely stay with the main page or some such thing.
Er... never mind about #s 2 and 3, I just found the answers to those questions on Secular life - Nutwatch

Edit to correct URL.

Where do you get your subject matter?

People have let me know about sites like Demonbusters and Ladies Against Feminism. At other times, I've simply done google searches using phrases like the following :

the sin of atheism
blows that hurt cleanse away evil
atheists in hell
women, submit to your husbands
turn or burn

This usually results in a rich crop of the lunatic variety.

How long does it take you to do a typical 'Nutwatch'?

By Wednesday, I've usually started doing a search for promising sites. When I find one, I open a new Word document and begin to cut-and-paste whatever looks good, although I stop by the time I have 8 - 10 pages. By Thursday or Friday, I've cut the raw material down to perhaps five or six pages of the best, adding tags such as URL and adding any comments of my own that leap to mind. Saturday provides more commentary - since I rarely work on the Nutwatch for more than half an hour at a time, it tends to be spread out over the last few days. On Sunday, I fill in any gaps and write the introduction/conclusion.

How do you decide how much/which parts of a site to respond to?

I try to include at least a sentence or two from the main page to let the readers know the genesis/purpose/primary delusion of the subject. Other than that, I've got few restrictions for myself other than making sure that the subject matter is as interesting as possible - i.e. no large chunks of text regarding the authorship of the Q gospel - and that it's not likely to disgust people beyond a certain point (my own point is photographs of supposedly aborted fetuses). I tend to click on anything featuring

1. an expose of atheism
2. rules for women and children - including sex
3. descriptions of hell
4. the rapture
5. creationism

in that order.

Thanks for your interest. Let me know if you have any more questions.
