I love the Chinese Ketchup, but it's gotta be REAL soy sauce.
Stuff with names like "Miss Chinatown" that are dark and thick and way too salty may go well with sub gum chicken balls, but it's not soy sauce. That crap is made by boiling soy meal with hydrochloric acid, and if you sell it in China you get 5 years hard labour for commercial fraud. Real soy sauce is a fermentation product, can be light or dark, but not thick. It should be nicely salty like a potato chip. In short, it should taste like food (mushrooms?), not chemicals. Kikkoman is real, but is made in the Japanese style, which is a bit different. "Made in PRC" or whatever province is what I look for. |
