With Tori and Lemmy already given their due, I'll make a case for my two favourite lyricists: John Hiatt and Martin Walkyier.

Martin Walkyier, originally of Sabbat, later of Skyclad, writes a lot of his lyrics from a very pagan point of view. The song I've linked to (a bit long to put up here in full) regards a conversation between a Saxon sorceror and a Christian monk, based, as is the entire Dreamweaver album, on Brian Bates's novel "The Way of Wyrd". Here's a snippet, and go here for the full text.

Interestingly enough, both are pretty religious guys, quite unlike myself.

you have to be joking... iron maiden has some of the worst lyrics ever... the trooper and aces high being the worst of the worst.
