Ulpian's De Officio Proconsulis, an early third-century compendium of Roman criminal law. I would particularly like to see volume VII with the rescripts regarding Christians.

Probably doesn't count as downright ancient, but some of the journals kept by Lewis and Clark on their expedition did not survive.

In the same spirit as the above, I wish we had Claudius's Etruscan and Carthaginian histories. Not only would it yield a lot of useful information, but it would give a lot of insight into the personality of one of the more interesting emperors.
