The point is, these are *religious* laws. They can serve their intended purpose regardless of secular purpose. And one can say that the psychological value of ceremonial behavior serves a secular purpose regardless of the content of the ceremony.

Kosher chicken is supposed to have a lower bacterial load than the non-kosher variety, because kashrut forbids warming the meat before it is bleeded with salt, thus the procedure of using warm water to remove the feathers isn't allowed. As a result however, kosher chicken tends to look like it needs a shave.
