Try the standard texts in the recommendations for the NT, mostly by Christians.

www.earlychristianwritings.com is devoted to scholarship. Does that count? Or do you need a site run by a Christian? Does it have to be a True Christian? How about the Jesus Seminar?

Going back to the original question, even the most fundamental of fundamentalists would have a hard time claiming that the gospel of Luke is written by an eyewitness. After all, the first thing that "Luke" mentions is that he is not an eyewitness, and that everything that he has written was passed down to him. Quoting from Luke 1:1-4 (NIV):

1Many have undertaken to draw up an account of the things that have been fulfilled among us, 2just as they were handed down to us by those who from the first were eyewitnesses and servants of the word. 3Therefore, since I myself have carefully investigated everything from the beginning, it seemed good also to me to write an orderly account for you, most excellent Theophilus, 4so that you may know the certainty of the things you have been taught.

Indeed. I don't think I've met one professional NT scholar who would say that the gospels are first-hand accounts. Many will say that the Gospels probably contain oral tradition that preserved first-hand accounts but this is not the same as saying that they were first-hand accounts. It is more like "I knew a guy who knew a guy" than "I was in the temple one day and saw Jesus toss over some money-changers' tables."

Try Raymond Brown's NT Intro. It even has the Nihil Obstat and Imprimatur, IIRC.
