I'm thinking of getting Robert M. Price's book The Incredible Shrinking Son of Man (or via: amazon.co.uk). What I'm wondering, though, is how air-tight the scholarship actually is.

Robert Price is reliable. I don't know if that is the best book for you - Price assumes a certain familiarity with the entire history of New Testament criticism. What are you looking for?

I don't think I'm looking for anything specific- just stuff about the history of the Gospels. To get me started on Biblical history.

I liked Who Wrote the New Testament? (or via: amazon.co.uk) by Burton Mack.

I've read both books mentioned here, and would recommend them both.

Incredible Shrinking is good, and yes, worth it and respectable scholarship (he makes a few mistakes but they are not significant) - yes Burton Mack, per Toto's recommendation is also good- perhaps better as a starting point.

Realize that GenesisNemesis is a high school student - if you ever get a chance to listen to Robert Price debate, don't miss it. But his books may not be the best place to start. The articles on his website are generally worth while.
