All Tim Burton's films look beautiful, Big Fish included, any Miyazaki film obviously, and I whole heartedly agree with whoever said Wings of Desire.

The Hidden Fortress comes to mind for beauty in a movie.

As someone said before, 2001: A Space Odyssey is visually stunning.

I also think that Amadeus is excellent, primarily for the musical contributions of The Academy of St.-Martin-in-the-Field and Neville Marriner and the really cool cinematography.

This probably doesn't count, since it's an art film, but Aria, a collection of short films set to opera...freaking amazing. I highly recommend it to everyone.

"Never Cry Wolf".

Good to see that I'm not the only one on the planet who got wrapped in this.

Strangely under-rated.

It's a Disney movie.

And yet.

Didn't notice anyone else mentioning this, so -- also by Zhang Yimou, and also visually stunning:

Raise the Red Lantern (very elegant, low key snowy northern China scenes with these big, beautiful red lanterns providing splashes of colour)

Ju Dou (many scenes take place in a textile mill, shots full of brightly coloured cloth)

... and I actually found much of 'Apocalypse Now' quite beautiful -- though you do rather have to look past the corpses in the foreground.

Kwaidan--"Ghosts"

This is a Japanese "horror" film that is widely considered one of the most beautiful films ever made. It is. Every scene is filmed as a picture that would make later directors jealous. Its stories may not be as great for some people, so understand it may not be everyone's "cup of tea"--particularly if there is a ghost in it.
