There was no one named Ebion. "Ebionite" is derived from the Hebrew word for "the poor." Not sure it is that simple. Yes, the Gospels were likely written after Paul, but pretty much all NT scholars agree that the sources traditions (oral and written) that were incorporated into the Gospels go back several decades. Paul himself claims to have been a recipient of such tradition (cf. 1 Cor 15). My own opinion is that Paul's knowledge of Jesus as a historical figure comes almost entirely from Peter (cf. Galatians 1), but he developed his theology in a unique direction that has more to do with Platonizing Jewish thought than with Jesus of Nazareth.
