I think the arguments for the supremacy of the texts used in persia may be a little different from the arguments of western supremacists.
I am in the process of putting something short together on the history of the stance of scholars towards the peshitta, which may be a better place to start.

What do you mean by non-canonical NT? Aren't the two mutually exclusive?

If you mean non-canon Xtian writings, I offer the Nag Hammadi collection.
