What I don't get is how that mass of mud got dumped on those poor fish swimming around the top of Mt. Everest - and managed to stay there and turn into rock.

Well duh. Mt. Everest was only 10 feet tall when the flood happened. But then during the time of Peleg, the world divided and the mountains grew.
