As a former Catholic I would like to read books that critically analyze the position of the Church.

There are some Biblical passages the Church uses to support itself (Matthew 16:18 about Peter "The Rock" being the best one), I wonder if these have been analyzed.

I am also interested in whether the Church has changed its teachings throughout the years. It claims to be infallible, so it can't err when teaching about faith or morals, whatever that means.

You will find a lot of anti-Catholic material on the web contesting the interpretation of Peter as head of the church. I don't know if that is what you want.

Against Catholicism, but from a non-Catholic Christian or atheistic point of view, do you mean? If something has happened recently that has turned you off Catholicism, it could possibly be something I've been dealing with myself, I would be interested to hear.

Like Toto said, there's no shortage of anti-Catholic material to be found, on the internet or anywhere else. You might need to narrow things down a little.
