Toto,

Your making it difficult for me to complain about the misuse of the word kosher. Here are a list of a few more things in this article - kosher water, kosher dog food, kosher condoms - all developed from the argument used for kosher salt i.e. strict manufacturing oversight

My congregation was and is very conscientious about using only Kosher certified gelatin.
According to the manufacture, the popular store brand 'Jello' gelatin is made with pig bones. No problem of course if you are not Torah observant.

Wait, wait. Does the restaurant hire only gentiles to serve on Shabbos, working as wait-staff being forbidden to the more conservative Jews? Can a gentile serve a plate of kosher food and not contaminate it with his pig-molecule-laden breath?

It's not just pig molecule laden breath. The Samaritans in the early period used to urinate or take fire to purify any place that had contact with Gentiles. The Gentiles are impure by the very nature of their being. That's why the slaves of Jews had special laws pertaining to them too.
